Pouligny-Saint-Pierre is a pyramid-shape cheese from the Loire valley made using raw or pasteurised goat’s cheese. In Sheridans we sell Pouligny-Saint-Pierre Fermier from Courthial, which has been affiné en blanc. The mottled rind contrasts beautifully with the startlingly white paste within. the flavour is subtle, salty, floral and complex.
