Pedro Ximénez appears in all its splendor in Alvear 3 Miradas Vino de Pueblo. Specifically, the bunches of this variety have been grown on old vines in different areas of the Sierra de Montilla, in particular in the areas of Río Frío Alto and Cerro Macho, all under the Superior Quality certificate. This assumes that the vineyards are located on albarizas (known in the area as alberos), with limestone soils poor in organic matter. This composition helps the water from the scant rainfall (between 500 and 1000 mm/year) to be easily retained in the lower layers of the soil, helping the vine (which faces long and very hot summers of up to 46ºC). With these conditions the ripening will be slow, obtaining high-quality grapes.Producer
Alvear is the oldest family-owned winery in Spain, and the oldest winery in Andalucía, making it the original producer of sherry-style wines (vinos generosos) in Andalucía. Alvear launched the 3 Miradas project in 2016 to express the terroir of Montilla-Moriles without the interference of the ageing-intensive process used to produce the classic wines of Montilla. They use a selection of their top "grand cru" vineyards from the Sierra de Montilla de Calidad Superior to make five single vineyard wines and one Vino de Pueblo.
