Recipe:

Serves 4 people

50ml milk

150g Rustichella Polenta

150g  Prunotto Artichokes

60g butter

30g Cravero Parmigiano Reggiano

Few drops of white truffle oil (optional)

To Make:

Put the milk, 500ml water and a teaspoon of sea salt in a large heavy-based pan and bring to the boil. Slowly pour polenta into the boiling liquid, stirring to prevent lumps forming. Turn down the heat but keep stirring.

The polenta should simmer, but  be careful, it can spit hot grains. The polenta is a instant style polenta so it should quickly turn into a just-pourable mash. You may need to add a little more water depending on how hot your water was.

Before serving, stir in the artichokes, butter and Parmesan. Taste and add salt if necessary. Add a few drops of truffle oil, if using. Top with some sliced artichoke for garnish and serve immediately.
