Carrig Bru, 150g
Carrig Bru comes to Sheridans as a young wheel of cheese ready for aging. The wheels are produced by Carrigaline Farmhouse cheese in Co. Cork and are aged in our Sheridans Meath location by Sheridans affineur Mark Booker. The cheeses have natural rind created by repeated washing in IPA ale from Irish brewery Wicklow Wolf. The flavor is light and buttery with hints of cream, earth, and a slight ale finish. The texture is semi-firm, and can be used for anything from cheese boards to sandwiches.
