Story

Cava is Spanish sparkling wine. Cava is made the same way that Champagne is produced, but with different grapes.

Producer

Agustí Torelló Matá is a family company producing distinguished reserva and gran reserva cavas in the Penedès region. Founded in 1950 by Agustí Torelló, the winery is committed to using only Spanish varieties macabeo, xarel·lo and parellada from vineyards in Sant Sadurní d’Anoia, the capital of Cava and the heart of the Penedès region. The estate owns 40 hectares, with long-standing contracts on 60 more, and only uses fruit from vines that are at least 30 years old. All vineyards are worked organically, and this practice continues into the winery. There is a strong focus on macabeo at Agustí Torelló Matá. It’s thin-skinned and can be difficult to work with, but it brings a delicate fruit profile that makes these cavas stand out from all the rest. Xarel·lo plays a secondary role, adding structure and acid, with parellada bringing up the rear. As a guarantee of quality, all cavas are vintage-dated and carry the date of disgorgement, highlighting the long lees ageing the top wines receive.
