Undoubtedly the most famous Greek cheese, Feta is a pickled fresh cheese which the Greek shepherds traditionally kept in brine in order to preserve it. In Greece the cheese is often soaked in a mixture of milk and water to remove this briney flavour leaving a creamy, fresh cheese which goes beautifully with black olives and flat bread. Alternatively try it in a Greek salad of tomatoes, cucumber, red onions, cos lettuce and oregano.
