Lambrusco is the name of both an Italian red wine grape and a sparkling red wine made principally from said grape. The grapes and the wine originate from four zones in Emilia-Romagna and one in Lombardy.

Denny Bini founded Podere Cipolla in 2003 on his family’s farm with the intention of making L ambrusc os that are faithful, transparent representations of the Emilia Romagna territory. Secondary fermentation occurs in bottle: the classic method of making Lambrusco that has all but disappeared
