A soft, unctuous sheep’s milk cheese is best served at room temperature, almost warm. The top can be sliced off and the rich creamy paste scooped out with crusty bread or a spoon.

Torta Del Casar is a raw ewe’s milk cheese from the Caceres and Coria area of Extremadura in west-central Spain near the Portuguese border. Each cylindrical-shaped torta weighs between 300g and 1.5 kilos, its appearance is characterized by a loose natural, often cracked rind and a soft ivory coloured paste. Torta Del Casar is very creamy in texture, maturing to an almost liquid state. Its flavour is characterized by strong herbal and floral aromas and bitter / sour notes, deriving from the cardoon thistle extract used to rennet the cheese. This slightly bitter note cuts perfectly through the initial unctuous creaminess of the cheese.
