Cheddar made properly — cloth-bound, aged on the farm, often from raw milk — has almost nothing in common with the block sold under the same name.

Our cheddars come from makers who still do it the long way. Expect a dense, slightly crumbly texture, a savoury depth that builds, and in the older wheels the crystalline crunch that comes only with real age.
