Fabbri Amarena Cherries are iconic Italian candied wild cherries preserved in a rich, dark syrup, produced by the historic Fabbri company in Bologna. Made from sour Amarena cherries (Prunus cerasus variety), the fruit is carefully selected, pitted, and slowly cooked in a dense syrup of sugar and cherry juice, traditionally enriched with natural flavourings that intensify their deep aromatic profile. Originally developed in the early 20th century, Amarena cherries have become a signature Italian garnish and ingredient used across gelato, cocktails, desserts, pastries, and chocolate work. Their bold flavour and visual appeal make them a classic finishing touch for sundaes, cheesecakes, panna cotta, and drinks such as Old Fashioneds and Negronis, where both fruit and syrup add depth and colour.
