Lambrusco Ponente

Lambrusco Ponente is a naturally sparkling red wine from Emilia-Romagna, made primarily from Lambrusco grapes grown using organic, low-intervention farming. It is fermented with native yeasts and then undergoes bottle refermentation using the ancestral method, which creates its natural bubbles without added sugar or industrial carbonation. The wine is typically left unfiltered, giving it a slightly cloudy appearance and a more rustic, expressive character. Production is small-scale and focused on reflecting the local terroir of Reggio Emilia rather than a polished, commercial sparkling style.

Denny Bini founded Podere Cipolla in 2003 on his family’s farm with the intention of making Lambruscos that are faithful, transparent representations of the Emilia Romagna territory. Secondary fermentation occurs in bottle: the classic method of making Lambrusco that has all but disappeared.
