Jean’s grandson, the young and extremely talented Fabien Dauvissat, since taking over in 2009 changed dramatically the estate style, farming organically (some vineyards managed with biodynamic principles), hand harvesting, and vinifying with spontaneous fermentations and without any chemical additives.
