Chimac is a Dublin-based food brand and restaurant group best known for its Korean-inspired sauces and fried chicken concept. Founded in 2019 by Sofie Rooney and Garret Fitzgerald, the business began as a fast-casual restaurant in Dublin serving Korean-style fried chicken influenced by the couple’s travels in Seoul.
