Killeen Cumin
Killeen cumin cheese is made in County Galway by Marion Roeleveld using a Gouda-style method with pasteurised cow’s milk. The milk is curdled with traditional rennet, then the curds are washed and pressed before being formed into wheels, a process that creates a smooth, semi-firm texture and mild base cheese. Cumin seeds are added during the cheesemaking stage so they are evenly distributed through the curd before pressing. The cheese is then aged for a short period so it develops a clean, milky flavour with the warm, aromatic spice running through it
