Description
Bulli Sampagnino Bucco
The grapes undergo a short skin maceration at harvest, followed by destemming and gentle pressing in a low-pressure pneumatic press to separate juice from skins. The must is then allowed to settle naturally before undergoing a cool fermentation in stainless steel tanks for around 15–20 days, where sugars are fully fermented out. The wine is bottled at the end of winter, with a small addition of fresh must to trigger a secondary fermentation in bottle.
