El Godo Capers

Edmond Fallot capers are typically sourced from Mediterranean regions where caper buds grow on wild caper bushes in warm, dry climates. The buds are harvested by hand while still tightly closed to preserve their delicate texture and concentrated flavor. After picking, they are traditionally preserved in salt or brine, which draws out bitterness and develops their signature sharp, tangy, savory character over time. The capers are then sorted and packed, with the curing process being key to their clean, briny intensity.
