Jack McCarthy White Pudding

Jack McCarthy’s puddings are made by blending fresh pork blood (for black pudding) or pork fat and meat (for white pudding) with Irish oats, onions, seasoning, and a carefully balanced mix of spices. The mixture is then filled into natural casings or moulds and gently cooked to set the texture and allow the flavours to bind together. After cooking, the puddings are cooled and often lightly dried to firm up before packaging. This process keeps them in good shape for cooking and maintains that traditional butcher-style texture.
