La Dame de Onze Heures is a very small Saint-Émilion estate in Bordeaux run by Vincent and Béatrice Rapin, who farm a tiny vineyard using organic and biodynamic principles. The wine is made in a low-intervention style with hand-harvested grapes, native fermentations, and minimal ageing in alternative vessels like concrete or amphora rather than heavy new oak.
