Sheridans Pitted Kalamata Olives

Kalamata olives are traditionally made by hand-harvesting ripe purple olives from the Kalamata region of Greece, then naturally curing them in brine or vinegar to remove bitterness. They are slowly fermented over several months, often with olive oil, wine vinegar, and herbs, which develops their signature deep flavour and soft, fleshy texture.
