Kalamata Olive Flatbreads with Caramelized Onions

Ingredients:

  • 2 red onions, cut into strips
  • 2 tbsp Odysea Kalamata PDO olive oil
  • Extra Odysea olive oil for drizzling
  • 2 tbsp Odysea Ajvar Meze
  • 1 cup Kalamata olives, pitted and halved
  • Greek yogurt (optional)
  • 2 tsp salt
  • 4 flatbreads
  • Fresh herbs (e.g., parsley or cilantro) for garnish (optional)

Instructions:

  1. Caramelize the Onions:
    • Heat 2 tbsp of Odysea Kalamata PDO olive oil in a medium pan over low heat.
    • Add the sliced onions and 2 tsp of salt to the pan.
    • Cook the onions on low heat, stirring occasionally, until they are soft and caramelized. This should take about 12-15 minutes.
  2. Prepare the Flatbreads:
    • Preheat the oven to 180°C.
    • Place the flatbreads on a baking sheet and warm them in the oven for about 10 minutes.
  3. Assemble the Flatbreads:
    • Remove the warmed flatbreads from the oven.
    • Evenly distribute the caramelized onions over the flatbreads.
    • Add the halved Kalamata olives on top of the onions.
    • Drizzle with Odysea Ajvar Meze for a spicy kick.
  4. Optional Toppings:
    • If desired, add a dollop of Greek yogurt on each flatbread for a creamy contrast to the spicy Ajvar.
    • Serve with chickpeas, lightly blitzed in the food processor
  5. Garnish and Serve:
    • Garnish with freshly chopped herbs such as parsley or cilantro for a burst of freshness.
    • Serve the flatbreads warm as an appetizer or light meal.
