Ingredients:
- 2 red onions, cut into strips
- 2 tbsp Odysea Kalamata PDO olive oil
- Extra Odysea olive oil for drizzling
- 2 tbsp Odysea Ajvar Meze
- 1 cup Kalamata olives, pitted and halved
- Greek yogurt (optional)
- 2 tsp salt
- 4 flatbreads
- Fresh herbs (e.g., parsley or cilantro) for garnish (optional)
Instructions:
- Caramelize the Onions:
- Heat 2 tbsp of Odysea Kalamata PDO olive oil in a medium pan over low heat.
- Add the sliced onions and 2 tsp of salt to the pan.
- Cook the onions on low heat, stirring occasionally, until they are soft and caramelized. This should take about 12-15 minutes.
- Prepare the Flatbreads:
- Preheat the oven to 180°C.
- Place the flatbreads on a baking sheet and warm them in the oven for about 10 minutes.
- Assemble the Flatbreads:
- Remove the warmed flatbreads from the oven.
- Evenly distribute the caramelized onions over the flatbreads.
- Add the halved Kalamata olives on top of the onions.
- Drizzle with Odysea Ajvar Meze for a spicy kick.
- Optional Toppings:
- If desired, add a dollop of Greek yogurt on each flatbread for a creamy contrast to the spicy Ajvar.
- Serve with chickpeas, lightly blitzed in the food processor
- Garnish and Serve:
- Garnish with freshly chopped herbs such as parsley or cilantro for a burst of freshness.
