There is an aroma of the cellar about Tomme de Savoie, yet the flavour is mild and milky, with notes of butter, walnuts, herbs and an almost sweet smokiness. The texture is pliable but not soft with small airholes throughout.Â

Story
Tomme de Savoie is a pressed, uncooked cow’s milk cheese from the departments of Savoie and Haute-Savoie. All the milk used must be from cattle grazing in Savoie, Haute-Savoie and 3 communes in the department of l’Ain. Tomme de Savoie is traditionally made with skimmed milk, the cream being used to make butter. This results in a cheese with 20-40% fat in dry matter.
Producer
The Schmidhauser family originally began making cheese in Switzerland over 100 years ago before moving to the Savoie region to begin ripening cheese in the 1960s. More recently since 2001, they have begun to produce cheeses themselves working with local farms for milk. The company is still family run today.
