Ingredients:
1 or two drunken saint
1 puff pastry
Crusty bread and chutney for cheese optional
Serve with salad greens tossed in balsamic and olive oil with salt and pepper to taste
Chutney or Cranberry sauce optional
Method:
Preheat the oven to 200°C fan
Roll out the store bought puff pastry on a floured surface. 1 piece is unusually enough to wrap two Drunken Saint cheeses.
Place the Drunken Saint in the centre of the puff pastry. If your sheets of pastry are very large, just cut down into square that are just big enough to wrap around the cheese like a purse.
Fold the pastry up to cover the cheese. Trim the excess pastry, which can be used to decorate the pastry. Lightly pierce the pasty in a couple places.
Brush the pastry with the egg.
Place the cheese on a baking tray or in an oven safe dish and put it in the oven.
Bake for 20 minutes or until the pastry is crisp and browned.
Wait for the cheese to cool down for about 5-10 minutes before cutting and serving with salad, crusty bread and chutney.
