Story
Buche de Lucay goat logs are made with salted curds which are moulded into log forms and then coated with Penicillium Candidum. The logs are left to ripen and develop a velvety rind thanks to that active Penicillium. The resulting cheese leaves a crumbly centre with a ripened outer layer encased in a pillowy edible rind.
Producer
The Jacquin family began producing cheese in 1947 in the Loire Valley, France. The Loire’s fertile landscape is renowned for producing some of the best goat cheeses in the world and the Jacquin family are committed to quality made PDO goat’s cheeses.
