Meet the Cheesemaker: St Tola Goat Cheese

Handmade in Inagh just south of the Burren since 1978, St Tola is regarded as one of Ireland’s finest artisan cheese producers. Originally established by Meg and Derrick Gordon, the business was taken over by their neighbour Siobhán Ní Ghairbhith in 1999 ,making it the longest produced Irish goats cheese . Since then, Siobhán has grown the operation from a small cottage industry to an internationally recognised brand – all while maintaining the integrity of traditional, small-batch cheesemaking.It was the only Irish cheese to be awarded SuperGold in the World Cheese Awards in Nov 2025 making it one of the Top 2% of cheeses in the world and is listed in the recently published book “100 Cheeses To Rule Them All”.
During the visit, you’ll tour the farm, meet the goats, get to taste the range of St Tola cheeses and hear how the St Tola team have developed the business into a sustainable and ethical model ,rooted in community and craft. The experience concludes with a guided tasting of their award-winning goat cheeses – from fresh and creamy to mature and ash-rinded.
St Tola is a member of CAIS, the Slow Food Movement, and the Burren Eco Tourism Network, and is located just a few miles from the Wild Atlantic Way – making this a truly special food experience not to be missed.
