Ballyhubbock Imaal
Halloumi is a popular cheese throughout the Eastern Mediterranean where it is eaten in both raw and cooked states. Although often made exclusively from ewe’s milk Haloumi can also be made from a mixture of milk from different animals. George and Hanna make their IMAAL cheese from the milk of their sheep raised on their third-generation hill farm in The Glen-of-Imaal, Baltinglass, Co. Wicklow. Because Ballyhubbock is made from pure sheep’s milk it has a creamery richer texture.
