Garofalo Ricotta di Bufala
Ricotta roughly translates to re-cooked, from Italian. Traditionally ricotta is made by heating the leftover whey from cheese making. The whey is heated until the curds rise to the top which are then hand ladled and strained to create this smooth and rich soft cheese.
