Description

Irish Rhubarb and Elderflower Jam

Created by Sheridans, made using only Irish fruit in open pans in small batches by Tom Laura Sinnott in New Ross, Co. Wexford. Irish Strawberry & Balsamic Jam is made by gently cooking ripe strawberries with sugar until they break down into a thick, fruit-forward base. A measured amount of balsamic vinegar is then added during the cooking process, where it reduces and integrates into the fruit, adding depth, acidity, and a slight savoury richness.
