Sheridans Branded Cheese Knife

The Due Cigni 1896 cheese knife is made in Maniago, Italy from high quality German stainless steel that is precision cut, ground, and heat treated to create a strong, sharp blade with a smooth satin finish. It is then fitted with a shaped wooden handle and secured with rivets, with the final assembly carefully balanced to ensure comfortable grip and controlled slicing. Works well with all cheeses from hard to soft.

Due Cigni (Two Swans), founded in the knife-making town of Maniago in northeastern Italy in 1896, is one of the country’s oldest cutlery manufacturers. Over the decades, Due Cigni became known for producing high-quality kitchen knives, shears, and specialized cutting tools used by both professional chefs and home cooks. In recent years, the company was purchased by another respected Maniago knife manufacturer FOX Knives which helped modernize production while maintaining the heritage and identity that made Due Cigni a staple of Italian cutlery. Today, more than a century after its founding, Due Cigni remains valued for its reliability, craftsmanship, and deep roots in Italy’s knife-making tradition.
