Sunblushed Cherry Tomatoes

Our roasted cherry tomatoes are made by slow cooking ripe cherry tomatoes at a low temperature with olive oil, salt, and herbs until they soften and concentrate the flavour. The slow roasting process draws out their natural sugars, giving them a jammy texture and brings out their sweet and tangy flavour. We love them in pasta dishes, salads, bruschetta, grain bowls, or as a topping for meats, fish, and fresh cheese like burrata.
