Tetillia
As its conical shape suggests, Tetilla takes its names from the Spanish word for ‘nipple’. This mild, creamy tasting cheese is made from the milk of Blonde, Friesian and Pardo-Alpine cattle that graze on the verdant pasture of Galicia, in the far Northwest of Spain. The short affinage of just one-week accounts for the sheer milky mildness of Tetilla’s flavour. Even the most sensitive of palates could not be offended by this most subtle of cheeses. The mild, yellowish rind contains a thick, smooth paste, with only the occasional eye.
