Subtly sweet and aromatic, with a firm, pliant paste. This classic Emmental is one of the largest cheeses in the world. It is easily recognized by its famous holes (also called “eyes” or openings) ranging in size from a cherry to a walnut and distributed evenly throughout the cheese paste.

Story
Emmental is famous for the large holes that are spread throughout this great cheese, and they are there by design. One of the starter cultures used in Emmental is Propionibacterium freudenreichii. When this bacteria consumes lactose during maturing, it produces CO2 as well as other compounds that contribute to the distinctive sweet nutty flavour of this cheese. This has the added effect of inflating the wheel, much like yeast in a bread dough.

Chabert produces traditional cheeses from Savoie. Their milk come from local farms focused on traditional pasture grazing and whose practices respect to sustainability in the landscape biodiversity. The milk is produced by local heritage breed cows adapted to the mountains terrain and climate. The three cow breeds Chabert works with are the Abondance, Tarine and Montbeliarde. The cows are free to roam their mountainous pastures to feed on a array of grasses, flora and fauna producing rich milk perfect for cheese making.
