Undoubtedly the most famous Greek cheese, Feta is a pickled fresh cheese which the Greek shepherds traditionally kept in brine in order to preserve it. In Greece the cheese is often soaked in a mixture of milk and water to remove this briney flavour leaving a creamy, fresh cheese which goes beautifully with black olives and flat bread.

Roussas Dairy was founded in 1952 by the Roussas Family and has remained solely dedicated to the feta cheese production. The Roussas family adheres to the traditional methods of their nomadic forefathers, the Sarakatsani, to produce their authentic feta cheese. Their sheep roam the mountains and hillsides of Greece producing rich, robust milk that is then transformed into intense, flavour feta cheeses.
