Fresh cheese is unaged and eaten young, which makes it the most immediate thing on the counter and the least forgiving about timing.

Buffalo mozzarella and burrata, ricotta, feta and fresh curd — all best eaten within a day or two of arriving, at room temperature, with good oil and salt.
