Story

Hegarty’s Templegall is a Swiss/Comte style cheese made with raw milk from their pedigree Fresian herd. The 40kg wheels are matured for at least 9 months, during which they are brushed 3 times a week (lots of attention makes a special cheese!). The name of this cheese comes from the local village Whitechurch which is “An Teampall Geal” in Gaelic.

Hegarty’s Cheese dairy farm is in Whitechurch, Co. Cork. Their 150-acre farm is home to their Friesian Dairy cows who supply all of the milk for their incredible cheeses. The father and son team, Jim and Dan Hegarty respectively, take a wholistic approach of complete traceability from field to finished cheese. Dan Hegarty is quick with a joke and always a great producer to work with, full of knowledge and a good story. They prioritise slow and sustainable growth of the farm. They are most known for their popular Cheddar, and have recently released small batches of Templegall once they were happy with them.
